Tusk & Trotter American Brasserie is located a block off “The Square” in Downtown Bentonville and features an atmosphere casual enough to invite families with a menu sophisticated enough to wow the most traveled gourmet. Our menu features local produce when possible and shifts seasonally to accentuate available ingredients. Our Owner and Executive Chef, Rob Nelson has been recognized repeatedly as one of our region’s best.
Tusk & Trotter’s floor plan was designed to invite families seeking to enjoy a delicious dinner, professionals wanting to meet for lunch or unwind after work, or a group of friends who just need a place to catch up. Our space, which was once Sam Walton’s general office and warehouse, is divided structurally in a way that naturally separates the quiet dining area to the South from the casual lounge area to the North. Interesting architectural elements of our space include exposed trusses overhead, acid-stained concrete floors, Sam's original warehouse door and an arched doorway connecting our lounge and dining areas.
Since opening in June 2011, Tusk & Trotter has received many awards and recognitions:
Executive Chef Rob Nelson has been recognized repeatedly as one of our region’s best. Rob was voted on to Citiscape Magazine’s Best of NWA 2009 & 2010 Reader’s Poll. Most recently, Rob won the AHA Arkansas Iron Chef Competition in September 2010, beating out top chefs from across the state.
Rob’s success is not surprising given his training and experience. After attending the University of Arkansas, Rob attended the Culinary School of the Rockies in Boulder, Colorado. While in Boulder, he also learned from James Beard Award winner Chef Hugo Matheson, Owner/Chef of The Kitchen.
Rob also studied in Avignon, France, located in the Provence region, where he attended Le Marmiton Cooking School and Universite du Vin in Sousse la Rousse, France. At Le Marmiton Cooking School, Rob studied under two-star Michelin recipient Christian Etienne, 1-star Michelin recipient Christian Peyre, and Disciple d’Escoffier Jean-Claude Altmayer. While at Universite du Vin, Rob studied under French Master Chef, Head of Disciple d’Escoffier Provence Chapter Michel Receveur and fellow disciple Jean-Michel Aviant. While in Avignon, Rob worked at La Mirande, a Michelin 1-star restaurant under Executive Chef Julien Allano.
Through his schooling and experience, Rob has developed a love for cultivating dishes featuring locally grown, seasonally correct ingredients. After ten years honing his craft, Chef Rob is sharing his culinary vision with our region.
Like traditional Brasseries, Tusk & Trotter offers a streamlined approach and a focus on seasonal ingredients. And you'll always find a laid-back, neighborly atmosphere and reasonable prices. It is within this culinary framework that Chef Rob has created a different type of pub menu that celebrates local food, honors tradition and welcomes seasonality, with special attention given to illustrate the varying ways beer and food can be paired to make both more enjoyable.
The upscale pub atmosphere at Tusk & Trotter brings a new and exciting element to Downtown Bentonville. Our beverage menu will include an extensive selection of micro brews, both on tap and by the bottle and our selection of wines has been hand selected to complement our menu and thrill enthusiast looking for something a bit “outside the box”. Our bar top is handcrafted from wood recovered during local historic renovations, our tables are darkly stained butcher block, and our motif is reminiscent of the early 20th century with historic photos and aged light fixtures at every turn. These factors all weigh together to invite one to sit and stay a while, have great laugh and come back again.
